Abstract
ABSTRACT Mineral and amino acid profile of crab Sudanonautes aubryi was studied. Samples were collected for mineral and amino acid analysis of the crab shell and meat. It was observed that Mg with daily intake of minerals (DIM) 0.4685 will be supplied to the body at most if the shell is consumed and K with DIM 0.41 will be supplied to the body at most if the meat is consumed. Glutamic acid was the most abundant non-essential amino acid (NEAA), while valine and histidine were the dominant EAA for shell and meat respectively. The amino acid profile of crab meat is higher than that of shell, while the shell has a higher chemical score (95) than the meat (89.77). The paper concluded that consumption of crab meat and shell should be recommended for various malnourished patients depending on their specific conditions.
